May Barkbox

We got Clyde’s BarkBox last week! It’s always an exciting time around here. Clyde gets super excited when he knows something is for him, let alone a whole box! It’s basically doggy heaven!

This month we got:
Bionic Rubber Bone – you can stuff the ends with peanut butter, it’s great for chewing and fetching. The bone is made with FDA food grade materials and tested in shelters with steel-jawed pups.
Nootie BBQ Chicken Jerky – is made in the USA and can be broken into bite-sized bits.
Etta Says Duck Chew – Made with novel proteins, which is perfect for pups with common meat allergies.
Max & Ruffy’s Snacks – Made in Maryland, sourced from organic strawberries and carob. Only organic, human grade, non-genetically modified fruit is used.
Zukes Clean Crisp Bone – Long lasting, grain free, and filled with antioxidants. They are made with flavors straight from the famer’s market like carrot, berry and apple.

So far Clyde has had the duck chew and the Bionic Bone. He loved the duck chew. He chewed it up super fast, but he hasn’t shown much interest in the bone. Maybe it will just take time. Not really sure. We had a pretty big weekend and I think he’s still recovering. So we’ll see how the rest of the treats go.

Do you get your pups anything special? I love the BarkBox because I get to try things that I normally wouldn’t get for Clyde. It’s great.

Monday Thunderstorm

We got hit by another thunderstorm last night. This one, however, was not nearly as destructive as the last one. I was actually home for this one too! I was able to capture some pretty awesome pictures. The storm resulted in thunder, lightening, and lots and lots of rain. The rain is so good since it was so hot here Sunday and Monday. Tomorrow is supposed to be 92! HOLY MOLY! I’m not ready for that yet.

Clyde did wonderful during the storm. He almost always does. He does this thing where he looks at me to see if I’m freaking out and if I’m not he relaxes almost immediately. It’s great. I don’t have to worry about him during the storm. He will even sit there and watch the storm with me. It’s so wonderful.

Did you guys get hit by any crazy weather? I’m thinking it’s going to be a crazy summer full of storms with the way it’s starting out!

Quick & Easy Paleo

Here is a go to meal for me when I have a busy night. I made this on Monday. Monday was insanely busy. I went from work to crossfit to home to mow my lawn/clean up after the storm and then go play softball. Yeah, my body was so ready for bed when I got home! We won’t mention that I had the long weekend at the Bucking Horse Sale.

Anyway, onto the meal. When I need something quick I usually turn to sweet potatoes roasted in the oven, another vegetable and a protein. In this case it was chicken thighs, sweet potato and asparagus. Can I just say that I’m going to be heart broken when asparagus is no longer on sale. I love asparagus season. Anyway, I digress, I roast the sweet potatoes in the oven and I fried the chicken thighs on the stove in olive oil and seasoned with lemon pepper. They taste wonderful!

What do you guys do for dinner on crazy busy nights? Do you give in and go out to eat? I try really hard not to eat out unless it’s at a good restaurant. It’s been a habit that was really hard to break but once it was broken it was a place I never wanted to go back to. So now I look for easy meals to make like this one.

Sunday Storm

So Sunday Billings got hit with a pretty bad thunderstorm. When I say pretty bad, I mean really bad. There is a lot of damage all across the town. Sunday is when I came back from Miles City. I was out picking up Clyde from the Fun Day. Clyde was having fun playing with the other dogs that I was in no real hurry to get home. Probably someone looking out for me there. We hung out during the storm out there and it really wasn’t that bad. There was some pea sized hail, maybe a little bigger, rain, thunder and lightening. No big deal. Typical thunderstorm in Montana.

So then Clyde and I are on our way home. We’re going along and it looked like it had out where we were. I got a little further east and I could see piles of hail. Again, no big deal. I get out to Lockwood and notice that the trees are missing most of their leaves and the ground is covered with them. Interesting. They must have gotten some bigger winds? Then I start heading towards home, the back roads, and it looks like a driving range! What the heck happened? The closer and closer I got to my house the more and more “golf balls” I seen.

Then I pulled into my driveway…wah wah…my neighbors house is TRASHED. There are holes in their siding, there are broken out windows, it’s a mess, and my yard looks awful. I pulled in and could not believe what I was seeing. Then I walked around my house and discovered that I too had a broken out window on the front of my house and the siding and gutters are just beat up. It’s horrible. I call my dad and ask him what I should do. He tells me I need to get the holes covered up. Well here’s the thing, I can’t reach the window, even with a step ladder. I’m just too short. Well my dad came over and saved the day! He rocks! Now I have tarped up windows and am waiting on insurance. Fun stuff.

I hope this isn’t a sign how the rest of the summer is going to go for us here in Billings. Usually we do not get these kinds of storms until August, when it’s super hot. But nope, let’s have one in May this year. Yeah…great fun. I have to admit I feel pretty lucky, I could’ve had so much more damage than I did. Windows can be replaced, siding can be repainted, gutters rehung, etc. I didn’t have to be here when the storm hit. That was a blessing in disguise. It meant that I didn’t have any damage to my car. Super lucky there. I hope and pray that everyone will be able to get back on their feet and recover from the storm.

Buying In Bulk

Have you ever seen a great sale on meat and thought there is no way I can eat that much before it goes bad? But then again, it’s such a great deal! Here’s what I do. I shop the sales at Lucky’s Market here in Billings. Every Wednesday I can be found there sometime after crossfit. Why Wednesdays? Well it just so happens that is their double ad day, frequently referred to as Double Ad Wednesdays.

Double Ad Wednesdays are when Lucky’s has the previous weeks sales still going on and the upcoming weeks sales start. So you get TWICE the items on sale! It’s the greatest thing ever. I love it. Because of this I have been trying to stock my freezer full of these great deals, especially meat. Meat can get so expensive and when you eat it for 3 meals a day it definitely cannot hurt when you find a deal.

Well, let’s face it. This is not a household of 4, not even 2, well unless you count Clyde who gets his own special food, so there is no way I could eat all the bulk meat that I buy. So what do I do? I have a Ziploc Vacuum Sealer System. So far I love it. Here I bought a bunch of chicken thighs on sale ($1.98/lb)! Now I must confess that I love the dark meat of the chicken. I find it has so much more flavor than the white meat.

It is really simple to use. You simply plug into the wall, grab a bag full of goodies (chicken thighs in this case), and hit the vacuum and seal button. It is seriously that easy! Now I have my cheap chicken thighs for days to come in much more reasonable portions! I chose to put split the packs of 8 into bags of 4 for the freezer.

What are some tips and tricks that you guys use to get the most bang for your buck? I use the same system when buying meat at Costco (usually hamburger and pork chops). Let me know! I’d love to know how else to get more out of my dollar!

Chicken Fajitas

Last week I had a serious craving for chicken fajitas! It was all I could do not to go to my favorite Mexican restaurant and get some. I thought though, that it would just be overwhelming with temptations that are not paleo. While I am not 100% paleo yet, I am trying not to fall into my old habits. So instead of going to the restaurant I made them at home! Easy peasy.

No chips and salsa, no tortillas, no cheese, no sour cream. Awesome. All the temptations were gone. So here’s how I made them.

Ingredients:
2 bell peppers
1 onion
2 chicken breasts
taco seasoning

1. Chop the bell peppers and onions.
2. Heat olive oil (not extra virgin) in a skillet on the stove.
3. Add onions and bell peppers

4. Chop chicken into strips
5. When the peppers and onions start to soften, add chicken to the pan
6. Cover and cook until the chicken is cooked through
7. Add taco seasoning and water (the water helps to disperse the seasoning all over the chicken and veggies)
8. Serve on a bed of lettuce, topped with guacamole and salsa

This dinner definitely satisfied the craving for chicken fajitas without blowing my diet. It was wonderful the next day for lunch as well. The flavors just merry and get even better the longer it sits. Delish! I got to the point where I quit eating the lettuce and would just eat the chicken and veggies. YUM! It’s very versatile. You could also make paleo tortillas or serve with plantain chips. Both would be great paleo options.

Bucking Horse Sale Weekend

I spent the weekend in the wonderful town of Miles City, Montana. It was great. I should mention that I grew up there, and there is this little thing that happens the third weekend in May every year, it is the World Famous Bucking Horse Sale. It is a super fun weekend, jam packed with a concert, rodeo, wild horse races, a parade and street dances. This year was no different than years past. They just keep getting better. It’s so nice to see the people come home. Anyway, I don’t have any pictures from the weekend. Whoops!

HOWEVER, I do have pictures of Mr. Clyde from his Fun Day at the Dragorra Training Center! He had a blast. He stayed with friends while I ran off to the big MC. He had a blast being a little show dog. I think I may have a model on my hands, folks. Here he is with all his winnings!

I’m so glad he had such a great weekend. I am going to enroll him in some obedience classes at the end of June. It will be a good thing for both of us. We need to set up some boundaries and learn the respect portion again. I can’t wait.
